Råraka - Schwedische Rösti mit Frischkäsebelag – unser Februar FOODPAIRING mit Henrietta

4 large potatoes (firm kind), Salt
75 gr butter
100gr of cream cheese
Zest of 1/2 a lemon
1,5 tbsp Fresh chives finely chopped
1,5 tbsp Fresh dill finely chopped, some garlic
Salt and pepper

Scrub the potatoes and grate coarsely. Mix with salt. Wring out the potatoes in a clean kitchen towel.
Heat a frying pan with the butter and let the butter turn an amber colour before you start frying. Form small Rösti and place carefully in the pan, about 4 at a time. Press out the Rösti while shaking the pan gently so the Rösti does not stick. Fry on medium heat for about 3 minutes per side. Place on paper towels before serving.
Stir together cream cheese, fresh spices, lemon zest, garlic and season with salt and pepper.

Top the Rösti and serve immediately  – preferably with a glass of Johanniter Vintage 2021 @bioweinbaupeterparadeiser !

The taste of browned butter brings out the warm citrus and cloudberry notes in the wine and the silky and smooth cream cheese with its slightly tangy quality pairs well with the Johanniters lively acidity.
