Mix with salt. Wring out the potatoes in a clean kitchen towel.<br \/>Heat a frying pan with the butter and let the butter turn an amber colour before you start frying. Form small R\u00f6sti and place carefully in the pan, about 4 at a time. Press out the R\u00f6sti while shaking the pan gently so the R\u00f6sti does not stick. Fry on medium heat for about 3 minutes per side.
